Backup and restore question for iPhone 4 and 4S

I'm going to purchase my new iPhone 4S tomorrow, and I have a question about backup and restore. I want to backup my 4 and then restore to my 4S.

When I perform a backup of my 4, does it back up EVERYTHING (i.e., contacts, music & video, photos, and apps)?

Does anyone know if the Apple Store has a device they can use to transfer all content to the new phone in-store?
